Balsamic Blueberry pie recipe~


Ok, this recipe is quickly becoming a big hit, so what do i do? I share it with you. Please if you try it at home, let me know how it goes and share in any tweaks or variations that become of it. Thanks

Here is the general recipe:

Standard Pie Crust recipe
(makes 2- 8 inch crusts)

2c AP flour
1tp salt
2/3c lard (if using shortening add 2 more tbsp)
4-5 tbsp chilled water

Blueberry Pie
(8inch)

1/3c sugar
1/4c Ap flour
1/2tp cinnamon
2tbsp of Balsamic vinegar
2tbsp Orange blossom honey
3c Blueberries(12oz frozen =2.5c)
1tp lemon juice
1tbsp butter

425 degree oven
mix sugar, flour, cinnamon, honey, vinegar, and blueberries together till berries are well coated
turn into dough, dot with butter and sprinkle on lemon juice. Cover with dough, seal flute, and vent. Cover edge with foil to protect from over cooking, remove foil lat 15 minutes of bake time. 35-45 min bake time.

turn dough out, and form into ball:

You can hold the dough overnight in the fridge, which makes a better crust, or use it right away.

Here is blueberries, with Flour, sugar and Cinnamon;

Now the blueberries are well coated with flour and sugar:

This is the vingar i use:

then its poured into blueberries;

rolling out the crust: i use a pint glass as a rolling pin;

rolled out thin(1/4 inch or less):

I then size up how much i need using the pan i will bake the pie in, cut it out, and fold it into quarter size so its easy to transfer into pan;

unfold it and work it into the pan, in which i then use a fork to dock the bottom of the crust;

Fill in the blueberry mix:

Then i pour on honey and lemon juice, and dot with unsalted butter(which i didnt have so you don’t see that in this photo):

cut stripes for lattice out of excese pie crust;

Then finish with a foil egde liner so you don’t burn the edge of the pie crust:
